The symbol

Leguminous plants grown between the rows nourish our vines, the breeze and sunlight protect them from diseases and patient waiting guarantees the perfect health and ripeness of the grapes. A natural balance and age-old traditions are the secret of the Cedro, a Chianti Rufina with a big personality and which expresses the characteristics of this appellation, also known as “the greatest of Chiantis”.

Climatic conditions
The flowering phase of the 2010 vintage was rather rainy which was an additional challenge for our winemakers. However, the summer was ideal for the development of the grapes, alternating between sunny days and some rain. This period allowed our grapes to reach an optimal stage of ripening for an ideal polyphenol concentration and aromatic intensity.

Climatic conditions
We particularly remember 2011 for its two-part August. The first 15 days were relatively cool with days not exceeding 30°C and cold nights. On the other hand, the second half of August was sunnier and more powerful, allowing the grape varieties, particularly Sangiovese, to develop healthy, mature bunches that were concentrated and rich in polyphenols.

Climatic conditions
On the whole, the winter was cold with temperatures below 0°C and accompanied by snowfall. The spring was also cool, notably due to frequent rainfall, which fed the water table and thus supplied the vineyards with water during the veraison phase in the summer. This summer period was also very hot and dry with temperatures exceeding 35°C so our vines, well rooted in the soil, were able to draw on the freshly filled water tables.

Climatic conditions
The 2013 vintage was impacted by a harsh winter with alternating sub-zero temperatures and heavy snowfalls. The spring was cool and rainy. However, despite a cool summer overall compared to previous seasons, a few heat spikes boosted the Sangiovese veraison period. Finally, the fluctuations in daytime and night-time temperatures favoured a progressive ripening phase.

Climatic conditions
In 2014, the relatively warm winter weather and the mild spring were the triggers for an early budding phase. However, the rainfall spread throughout the winter period rebalanced the vegetative cycle to allow the summer to accomplish its task gently: veraison. Thus, the bunches were able to mature progressively for an optimal harvest.

Climatic conditions
The winter of 2015 came later in our region, thus slowing down the vegetative awakening of the vines and the crying period by about ten days. Spring came at the right time, offering the vineyards a flowering period punctuated by sunny days and some rainfall. Finally, the long summer, with high temperatures exceeding 30°C and ideal climatic conditions, gave our grapes an ideal ripening.

Climatic conditions
The 2016 vintage is a great year that the winegrowers of our region still remember. In addition to having benefited from a late spring, it was mainly the abundant rainfall during the flowering period that contributed to the success of this season. Then, the warm and sunny summer allowed the grape varieties to ripen earlier for an optimal harvest and in particular a Sangiovese harvest of exceptional quality.

Climatic conditions
In our region, the 2017 vintage is known to have been an early year. After a mild and dry winter, the early bud break and spring showers allowed the flowering phase to start earlier than in previous years. Thanks to a hot, dry summer, the ripe, polyphenol-rich grapes could be harvested at the end of August.

Climatic conditions
The winter was cold, with alternating rain and snow, followed by a spring punctuated by periods of sunshine and rain. However, spring temperatures were maintained at high levels allowing the seasonal nature of the phenological stages to be respected. Finally, the summer of 2018 recorded high temperatures triggering thunderstorms in the second part of August. This was ultimately beneficial for the ripening phase.

The 2019 vintage experienced a cold winter with very little rain, pushing back the budburst period to the beginning of April. The delay accumulated during the flowering phase, notably due to the low temperatures recorded in spring. As a result of the delay in the entire vegetative cycle, the ripening of the berries in terms of phenolic compounds and aromatic capacity did not occur until the autumn.

Nose: fruit
Palate: compact, lots of fruit and an elegant structure, silky

  • Denomination : D.O.C.G Chianti Rufina
  • Vineyard : Southern exposure
  • Harvest : Hand-picked in crates before mid-October.
  • Vinification : Delicate destemming of the grapes; temperature-controlled fermentation and maceration in stainless steel for about 10 days, with several pump-overs.
  • Maturation : In 35 hl French oak barrels for about 12 months. Then at least another 6 months in bottle.
  • Grape varieties : Sangiovese - Canaiolo - Ciliegiolo
  • Alcohol content : 13,5%
  • Tasting notes : Intense and bright ruby red colour. Notes of undergrowth and small berries open the bouquet accompanied by notes of dry rose and violet. On the palate, notes of lightly toasted spices and leather give a sense of fullness. The taste is dry, savoury, but with soft and compact tannins. The finish is of good persistence with a nice acidity that characterises the Rufina area.
  • Pairing : In its early years, this wine goes well with all foods and as it ages, it is delicious with sauced meats, poultry and roasts.
