« The Excellence »

This oil derives from the first olives to be harvested and pressed at the end of October. In the Middle Ages, this production was reserved for the Lords of the Estate. The oil has an emerald hue, a symbol of power and eternal youth; the nose will enchant you with its intense cut gras bouquet. This oil should be consumed raw to season vegetable-based dishes such as pinzimonio, soup, salad and steamed vegetables.

  • Processing : Defoliation is followed by washing. Crushing is carried out using a milling machine to obtain a paste with a particularly homogeneous grain size and practically perfect dimensions to facilitate extraction. The kneading, at a controlled temperature of about 22°, is modulated between 16 and 45 minutes depending on the cultivar and the time of harvest. The last phase is separation, the first separating the solid part from the liquid part and the second separating the oil from the water. The whole process takes place in a controlled atmosphere and this allows us to avoid those fermentations that cause defects and allows a two/three to four times higher extraction of all the antioxidant compounds in the oil (Vitamin E, polyphenols, etc). At the outlet of the separator, the oil is immediately filtered to remove any impurities or water residues, which are extremely dangerous for the product. The yield is very variable depending on the year. Usually less than 15%.
  • Tasting notes : The colour is bright green with golden highlights. The intense and persistent perfume of fresh field herbs, artichoke heart and hints of aubergine. Excellent structure, fruity flavour, initially spicy with herbaceous hints.
  • Pairing : The ideal use of this wholesome product is in raw vegetable dishes such as pinzimonio; in soups, vegetables and salads and also in sauces, roasts and frying. Keep in its box to preserve its quality.
