La Schiacciata alla Fiorentina

Schiacciata alla Fiorentina is a typical Florentine recipe during the carnival period

Schiacciata alla Fiorentina is a soft, low-sugar cake with an orange flavour. It is a flat cake, similar in appearance to schiacciata bread and is a product found only in Florence.

It is sprinkled with powdered sugar and often decorated with lean cocoa powder using a stencil in the shape of a lily, the symbol of the city of Florence.

One piece of this “sweet bread” and you’re guaranteed to find yourself eating the last bite in no time!

INGREDIENTS (6 people)

  • 400 g of flour
  • 10 g brewer's yeast
  • 300 ml of milk
  • 100 g of lard
  • 5 tablespoons of sugar
  • 2 eggs
  • 1 grated organic orange peel
  • 1 pinch of salt

INSTRUCTIONS

  • Mix the flour, sugar, eggs and yeast dissolved in the milk
  • When everything is well incorporated, add the lard little by little and then the salt
  • Work the mixture well until it is soft and elastic
  • Leave to rise, covered, until the mixture has doubled in volume
  • Put some lard in a rectangular pan and sprinkle with a little flour
  • Pour the mixture into the mould and leave for another hour
  • Finally, bake at 180°C for 30 minutes
  • Remove from oven and top with cream or whipped cream
