Schiacciata alla Fiorentina is a soft, low-sugar cake with an orange flavour. It is a flat cake, similar in appearance to schiacciata bread and is a product found only in Florence.
It is sprinkled with powdered sugar and often decorated with lean cocoa powder using a stencil in the shape of a lily, the symbol of the city of Florence.

INGREDIENTS (6 people)
400 g of flour
10 g brewer's yeast
300 ml of milk
100 g of lard
5 tablespoons of sugar
2 eggs
1 grated organic orange peel
1 pinch of salt
INSTRUCTIONS
Mix the flour, sugar, eggs and yeast dissolved in the milk
When everything is well incorporated, add the lard little by little and then the salt
Work the mixture well until it is soft and elastic
Leave to rise, covered, until the mixture has doubled in volume
Put some lard in a rectangular pan and sprinkle with a little flour
Pour the mixture into the mould and leave for another hour
Finally, bake at 180°C for 30 minutes
Remove from oven and top with cream or whipped cream
