Sformatino di Cipolle

Sformatino di cipolle is a creamy flan with onions. It is a rich and tasty recipe to serve as a side dish or as a main course. Ideal for your weekly menu, with the family, for an aperitif or a buffet.

You can vary this recipe as you wish, adding different ingredients… in short, whatever your imagination suggests!

  • 4-5 red onions
  • 100 grams of butter
  • 100 grams of Pienza cheese
  • 4 eggs
  • 600 g sour cream


  • Cut the red onions into julienne strips and fry in butter, adding salt and pepper to taste
  • After cooking, mix the julienne with the pecorino cheese, the 4 eggs and the cream and let it cool down
  • Butter the moulds and fill them with the mixture
  • Bake the mixture in a bain-marie for about 30 minutes at 170°C
  • You can accompany the flan with what you like best
  • Note: you can make the tart with many other vegetables such as courgettes, leeks and asparagus or even artichokes depending on the season
