Tiramisù to cheer you up

The Italian dolce by definition, tiramisù is one of the must-have pastries. Did you know that the word “tiramisù” was the fifth most famous word in Italian cuisine abroad and the first for desserts?

Etymologically, “tiramisù” means “to cheer up” in the sense of lifting one’s spirits, strengthening one’s body and mind.

Here we suggest you try its authentic version with the taste of coffee and the intensity of its bitter cocoa.

INGREDIENTS (6 people)

  • 500 g mascarpone cheese
  • 5 eggs
  • 5 tablespoons of sugar
  • Pavesini or ladyfingers
  • Coffee
  • Vin Santo
  • Bitter cocoa powder

INSTRUCTIONS

  • Separate the egg whites from the yolks
  • Beat the egg whites until stiff and leave to rest in the refrigerator
  • Meanwhile, beat the egg yolks with the sugar to a light cream
  • Add the mascarpone and work in the cream
  • Add the stiffly beaten egg whites and stir slowly into the cream
  • Soak the boudoirs in the coffee and Vin Santo and spread them well in the mould
  • On top of the first layer of boudoirs, add the cream
  • Repeat with at least 3 layers
