INGREDIENTS (6 people)
500 g mascarpone cheese
5 eggs
5 tablespoons of sugar
Pavesini or ladyfingers
Coffee
Vin Santo
Bitter cocoa powder
INSTRUCTIONS
Separate the egg whites from the yolks
Beat the egg whites until stiff and leave to rest in the refrigerator
Meanwhile, beat the egg yolks with the sugar to a light cream
Add the mascarpone and work in the cream
Add the stiffly beaten egg whites and stir slowly into the cream
Soak the boudoirs in the coffee and Vin Santo and spread them well in the mould
On top of the first layer of boudoirs, add the cream
